I was browsing Youtube and found this video of Ilocanos fixing up some Kilawen. I think they’re here in the states since they were speaking English in narrating this. Anyhow, how they were doing it was a little more traditional to Ilocos than I’m used to seeing my dad do it here. They were doing it pretty much straight up raw in the vid. Still looks good to me. My dad would sear the beef pretty quick, and also use Kikkoman soy sauce. It was the bomb. I’ve been living on my own for more than a decade and those few times I go home, my dad always has some waiting in the fridge…always a welcome treat. They also do it with goat, and fish. Beef is the tastiest. But I have yet to try it straight up raw, which is what I believe is the original recipe.
